dc.description.abstractThis case tells the story of the start-up Essento, which develops, produces and markets insect-based foods, and the nascent sustainable entrepreneur behind the company. Essento contributed significantly to shaping the legal basis for the consumption of edible insects in Switzerland and rises to the challenge of creating an entirely new market and lacking customer acceptance.
